I’ve developed an interest in making my own hot sauce. Here’s the recipe for my second attempt.
Ingredients:
- 3ish cups Serrano peppers
- 2ish cups Habenaro peppers
- 1ish tsp each Chili powder, Cayenne pepper powder
- 1/2ish tsp Garlic
- 1/2ish tsp lemon juice
- 1/4ish tsp each Salt & Pepper
- 1/4-1ish tsp each of whatever other spices strike your fancy
- 1-1.5ish cups white vinegar
What? You were expecting accuracy?
*sigh*
Any any rate,
Steps:
- WEAR PROTECTIVE-WEAR ON YOUR HANDS, AND KEEP YOUR HANDS OUT OF YOUR EYES
- Roast the peppers on an open flame – use tongs please
- Slip into a pair of latex gloves (or suitable alternative)
- Remove skins and stems from peppers
- Did I mention the not touching your eyes part?
- Mix peppers and spices in blender
- Add enough vinegar to cover mixture and puree until smoothish
- Add more vinegar if necessary to attain desired consistancy
- Transfer mixture to sauce pan on stove and heat until slow rolling boil
- Continue heating on stove until eyes water and/or any pets exit the building
- Strain mixture through metal strainer or cheesecloth
- bottle and refrigerate
- wash your hands – SRSLY
- wash the blender parts in the dishwasher – SRSLY
- and whatever you do – DON’T LICK THE SPOON!!!
